Lolo’s Picklery was founded by Laura Caulwell. She makes small batches of pickled onions in her production kitchen in Stoneybatter, Dublin 7. Laura (Lolo) was a chef for 7 years but while on maternity leave she decided to start her own business. She experimented with ingredients and flavours and developed this range of three pickled onions. She uses live apple cider vinegar from The Apple Farm in Co. Tipperary, which gives her pickles a balanced sweet and sour flavour. She loves to play with colour and texture and these onions help to brighten up any meal!
